KISSING Your Food

I'm sure you've heard the KISS theory: Keep It Simple, Stupid (though I prefer "Sweetheart" ; ). Keep this in mind with food prep as well. I used to go way out and create this elaborate meals every day. I found myself getting stressed to out-do the last creation. Too much work and not enough joy. When I sat down at the table, it was more of an opportunity for me to just relax instead of enjoying what I'd just prepared. So, now I focus on less. I try to keep my salads under 4 or 5 ingredients, have just a piece of fruit as a snack, or eat just a baked sweet potato as a small meal. Making too much out of food takes away from the food and puts the emphasis on the process. That's out of balance for me.

Note: Capitalized recipes are my own.

Day 98

  • cup of hot jasmine green tea with honey
  • 3 slices of Fruit and Nut Manna Bread with coconut oil
  • an apple
  • lunch out at Bangkok Bistro: Drunken Noodles with extra veggies and tofu; vegetable spring roll; hot tea; water
  • Superfood IceScream (ice, almonds, cacao nibs, honey, mesquite, maca, lucuma, colostrum, irish moss, sea salt)
  • glass of water
  • bowl of green salad (Butter lettuce, grape tomatoes, cauliflower with a homemade honey mustard vinaigrette); Savory Rice (brown basmati, celery, onions, garlic, parsley, black pepper, sea salt); Spaghetti Squash with Walnut Cheese Sauce (walnuts, roasted garlic, fresh garlic, red bell pepper, olive oil, water, black pepper, sea salt)
  • glass of water
  • Yumpot (cacao powder, coconut oil, cashew butter, honey, maca, sea salt)

Today's Observations
Lovely dinner tonight! I made a wonderful dinner for the 'rents. Ironically, I was trying to keep it simple, but still impressive. I think it worked. The rice and cheese sauce seemed to be the big hits!
